Vegan chocolate and nut muffins
200 g flour
150 g sugar
1 teaspoon baking soda
1 pack of vanilla sugar (8 g)
60 g ground hazelnuts
30 g chopped hazelnuts to sprinkle on top
230 ml Coco Aloha Drink to go Cocoa (one carton)
A pinch of salt
90 ml vegetable oil
1 tablespoon vinegar
Mix the dry ingredients (flour, sugar, vanilla sugar, baking soda, and salt) together. Then slowly stir in the Coco Aloha Drink to go Cocoa, vinegar, and oil.
Don’t worry – the vinegar is an additional raising agent and the flavour will disappear in the baking process. Divide the mixture evenly between 12 muffin cups and sprinkle with chopped hazelnuts.
Bake in a pre-heated oven at 180 °C for 25–30 minutes.
